Teriyaki Madness told us by email that soybean oil is the only oil they keep in the shop: it runs the fryer and it seasons the grill before every round of chicken and steak, so nearly every hot dish touches it. Their teriyaki sauce itself is clean, with no oil and no artificial dyes, and the egg rolls and rangoons arrive par-fried in an oil their supplier does not name.

Teriyaki Madness answered by email and the answer was direct: soybean oil is the only oil they keep in the shop. It runs the deep fryer and it is used to season the grill before every round of chicken and steak, so almost everything hot on their menu touches it. On the wok their words were that the egg rolls and rangoons would not cook without burning in a wok with no oil, and soybean is the only oil there. They will skip the fryer and wok-fry your order on request, but that does not get you away from soybean oil, so I did not count it as a swap to a better oil. The one genuinely good finding is the teriyaki sauce, which they gave me in full: gluten-free soy sauce (water, soybeans, salt, sugar, corn starch), sugar, pineapple juice concentrate, garlic, ginger, spices, dehydrated garlic. No oil in it and no artificial dyes. The egg rolls and rangoons arrive par-fried from a supplier in oil they could not name.
