Bruegger's publishes a real per-item ingredient statement for 66 items, and the bagel itself comes out clean - the Plain Bagel is flour, water, malt extract, salt, yeast, wheat gluten, dextrose and ascorbic acid, with no oil in it at all, and sixteen more bagel flavors are the same. There is no fryer anywhere on the menu. What carries the seed oil is what you put on the bagel: the mayo is soybean oil, the ciabatta roll is soybean and/or canola, and the butter blend is a palm and soybean mix.

Seed oils: 15 of 66. Soybean oil in 12, canola in 2 (Ciabatta Roll, Sundried Tomato Spread), sunflower in 1 (Cranberry Bagel, via the dried cranberries), and a Palm/Palm Kernel/Soybean blend in 3. Mayo is Soybean Oil, Egg Yolk, Vinegar, HFCS and EDTA. The good part, and it is the main thing people order: the Plain Bagel statement is flour, water, malt extract, salt, yeast, wheat gluten, malted barley flour, dextrose and ascorbic acid - no oil. Seventeen bagel flavours in total are free of both seed oil and any flagged additive.
