Five lab-grown foods are headed for US shelves in 2026
Cell-grown salmon is already on restaurant menus. Lab-grown milk, egg whites, and even lab-made breast milk are next, mostly cleared through a faster GRAS pathway that skips full FDA review.

In the space of about eighteen months, at least five categories of lab-made food have gone from press release to FDA paperwork to, in one case, an actual restaurant plate. Some cleared a full federal safety review. Most didn't; they used a faster route that doesn't require the FDA to sign off before the product ships.
Salmon grown from real fish cells is already on menus
Wildtype, a San Francisco cell-cultivated seafood company, harvests living Pacific salmon cells and grows them in stainless steel tanks in a converted microbrewery, then blends the harvested cells with plant-based ingredients. In May 2025, the FDA issued Wildtype a "no questions" letter accepting the company's own conclusion that the product is "as safe as comparable foods produced by other methods," the first cultivated seafood cleared for US sale. It's already on the menu at Kann in Portland, Robin in San Francisco, and OTOKO in Austin, among other restaurants.
Cow-free milk is aiming for shelves this year
Two separate companies are racing toward the same goal by the same regulatory shortcut. Brown Foods, a Boston startup, grows whole milk, fats, proteins and carbohydrates included, from cow mammary cells in bioreactors under the brand UnReal Milk, and is targeting a US market pilot in late 2026. Remilk, an Israeli company, uses precision-fermented microbes to make a protein identical to cow whey and is eyeing a 2026 US launch after debuting in Israel through a joint venture with Gad Dairies.
Neither company went through the FDA's full pre-market approval process. Both used GRAS, Generally Recognized as Safe, a pathway that lets a company (or a panel it hires) make its own safety determination and optionally notify the FDA, which can respond with a "no questions" letter. That's a real, legal step in FDA's food regulation system, and it's the same shortcut most food additives use. It's also, by design, faster and less adversarial than the multi-year color additive petition process Beetroot Red just went through, a comparison worth keeping in mind before assuming every new food-tech ingredient clears the same bar.
Animal-free egg whites already made it to Walmart
The EVERY Company raised $55 million in a Series D round in October 2025 to scale OvoPro and OvoBoost, precision-fermented proteins built to replace egg whites in food manufacturing. Both already hold FDA "no questions" GRAS letters, and EVERY's protein is showing up on Walmart shelves inside other brands' products, not as a standalone item you'd recognize by name.
Lab-grown "breast milk" is still in early development
Biomilq, a Bill Gates–backed startup out of Durham, North Carolina, grows donated human mammary cells in bioreactors and has demonstrated the cells can secrete some of the nutrients found in human milk, including lactose and casein. This one is the furthest from your grocery cart: Biomilq has raised a $21 million Series A, hasn't filed for GRAS status or FDA clearance, and has said publicly it doesn't yet have a product ready to sell.
At least seven states have banned it outright
Alabama and Florida passed the first statutory bans on cell-cultured meat sales in 2024. Nebraska, Indiana, Mississippi, Montana and Texas followed by mid-2025, and South Dakota added a five-year ban in 2026. None of these state laws currently reach precision-fermented ingredients like milk or egg proteins; the bans target whole cuts of cultivated meat specifically, which is part of why salmon, milk, and eggs are moving faster to market than cultivated beef or chicken ever did.
What this means for your grocery list
None of this is illegal, and the safety data behind each GRAS determination is public if you go looking for it. What's missing is a label. A GRAS self-affirmation doesn't come with a consumer-facing disclosure requirement the way a genetically engineered crop does, so a protein grown in a bioreactor can end up in a product's ingredient list looking exactly like the traditional version it's replacing.
